Chickpea Tuna Salad
Course: Appetizer | Side Dish | Entrée Serves: 4You don't need that creature from the sea, when you can have chickpea! Try out this healthy fish-free "tuna salad"!
Ingredients
- 1 can of chickpea
- 1/4 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- to taste salt
- 1/2 bell pepper
- 2 stalks celery
- 1 1/2 tablespoon mayonnaise
- 2 tablespoon vinegar-free relish
- 1/2 tablespoon nutritional yeast flakes
Instructions
- Using a mesh strainer, drain and rinse chickpeas.
- In mixing bowl, add chickpeas and mash with fork until you reach desired texture.
- Mix in celery and bell pepper. Add mayo, relish, yeast flakes, onion powder, paprika, salt and mix until thoroughly incorporated.
- Serve in lettuce wraps, on a sandwich or with crackers.
